The bread at this Cambridge bakery is made according to Old-World traditions. Oce the dough is made and thoroughly kneaded, it's set aside in a warm area for several hours (up to a day in some cases) so that it can fully rise. It's then then punched down and prepared for the oven. On the shelves you'll find everything from whole wheat loaves to dark rye, as well as breakfast breads ranging from buttery, flakey croissants to thick, chewy bagels. You can even pick up flavored breads studded with cranberries, pecans, and other flavorful treats.
